If I learned anything from my talented husband about cooking, that would be definitely cooking with color. Elijah always let the color of food guide his cooking and it always turns out amazingly tasty. Somehow, different colors of food complete the meal and balance the flavors. And, besides bringing lots of nutrients to one plate, it is simply a pleasure to eat a colorful dish. And I am BIG on pleasure. ;-)
So here is my creation for tonight: Rainbow Stir-fry! So easy too. Just get whatever veggies from your fridge, preferably fresh, chop them as you fancy, and throw on the skillet with some good oil and spices.
What I used: celery, yellow squash, string beans, and grated carrots (because they take longer to cook, I suggest to grate them). Put them on the skillet at the same time, add some sesame oil (my new kick), 21 Seasonings Salute from TJ's, sea salt and stir-fry on law for about 10-15 mins.
Very satisfying and a great side dish for just about anything. Crunchy and smooth. Perfect for the fall and winter because it's warming and comforting.

Nice recipe! Thanks for sharing this delicious recipe of Rainbow Stir-fry. I am now trying to cook it because I want to taste it. I know that this is very delicious and I will enjoy cooking it.
