Seriously tasty - Hemp Ahi Tuna Salad w/ Pumpkin Oil

Do you often eat watching TV or working on a computer?  If yes, you should probably start cooking something so delicious that you would not want to get distracted eating it.  Something like this salad I just made.  Funny, but the more you cook, the more creative and intuitive you get.  The more you want to work with whatever is in your fridge rather than shopping for a particular recipe.   I know what everyone thinks about salads but try this one: 
  • organic local butter lettuce
  • cucumber
  • hemp seed
  • olives (I just found these cool olives in Trader Joy's that don't contain citric acid) 
  • ahi tuna from seafood section in Wholefoods or Lazy Acres 
  • pumpkin oil (unrefined, cold pressed, organic)
  • 1/4 tea spoon of organic mustard 
By the way, I think that the key to this salad is a delicious pumpkin oil that not very many people are familiar with.  You can find it in a refrigerator of some health food store.  I found mine in Lazy Acres after listening to the Body Ecology recordings.  It's incredibly rich and has a cool green color.
