Recipe of Vegetarian Soup that Goes with Everything


By Katrina's request, here is the recipe of my vegetarian soup that goes great with any meal.  It is delicious by itself whenever you are hungry but want to eat something light.  Or it is also perfect when you go through detoxification.  Basically, you can use whatever veggies you have in the fridge.  All vegetables should, preferably, be fresh local and organic vegetables from your farmers market.  If you have one.  There are lots of articles right now about the importance of eating local, fresh and organic veggies in season.  I actually just got back from a farmers market.  :)  But anyway, here is what I use: 
  • carrots
  • red skin potatoes
  • cauliflower 
  • celery 
  • parsley 
  • onions
  • garlic (crushed or chopped or powdered)
  • Herbamare seasoning salt (either health store or on-line, I love it)
  • Tarragon
  • Caraway seeds
  • strip of combu (sea vegetable, you can buy it in health store or your local Asian store - much cheaper)
First you chop carrots, potatoes, onion, cauliflower and celery.  Place it in a pot and add water.  On medium heat, cook for about 20 mins.  Add combu (optional, but has tons of minerals), Herbamare (or just good quality ocean salt), tarragon, caraway seeds and garlic.  Simmer for 10 more minutes.  In the very very end, add chopped parsley, and simmer for 1 more minutes.  Let stand covered for 10-15 minutes.  Take out combu (you can slice it and add later in your salad).  You can also add a little bit of olive or roasted pumpkin oil.
