Paleo Pancakes - sugar-free, flour-free


This morning I decided to try my friend Courtney's cool recipe of Paleo Pancakes.  She said it was super easy and delicious.  Only 3 ingredients.  No flour and no sugar, yet they can definitely satisfy the craziest sugar cravings.  Way too sweet for my diet, but it's a Saturday morning treat.  :)  Take 3 minutes to prepare.  Go great with raw organic milk.  Thank you, Courtney!  :)



Paleo Pancakes
Ingredients:

  • 2 ripe bananas
  • 1 egg
  • 1 heaping tablespoon of almond butter
  • vanilla to taste 
Instructions:
Mash the bananas, add the egg and mix well.
Stir in the almond butter, adding more than a tablespoon if you want a more pancake-like texture.
Warm butter (or coconut oil) in a pan and pour batter into small cakes.
Brown on each side and serve warm.
*** The key is to cook them at low heat so they don't burn.  It will take longer than normal pancakes (up to 7 minutes).  Make sure to add more almond butter if you want them to have the consistency of a pancake and not be runny.
